Pinwheels


This recipe is great for showers, football games, parties, etc. They are always gone before the end of the party! You cannot eat just one. Thanks to my friend, Laura, for sharing her recipe.
2 pkg jalapeno cheddar tortillas
1 pkg cream cheese, softened
1 cup mayo
1 cup sour cream
1 box frozen chopped spinach, drain well
3-5 green onions, chopped
1 pkg fiesta ranch dip


Mix all together and spread thin layer on tortilla. 

Roll up and slice into 1 inch wheel. 


Serve with Albert's hot sauce. It taste best with these. Enjoy!!

Bean Dip



Here is another good dip from Pinterest!!


Ingredients:
2 cans (16 Oz) Refried Beans
1 can (10.5 Oz) Diced Tomatoes (see notes)
1 Tablespoon Taco Seasoning
4 cups Shredded Colby-jack Cheese (see notes)

Directions:
Preheat oven to 325F degrees.
Drain excess juice from tomatoes.
In a medium bowl, combine refried beans, drained tomatoes, taco seasoning and 2 cups of cheese.
Spray an 8×8 baking dish with nonstick spray. Pour combined ingredients into dish and spread around evenly.
Bake for 20-25 minutes until thoroughly heated through. Add remaining cheese on top of dip and bake for another 5 minutes until cheese is melted.
Serve warm with your favorite tortilla chips.

Cook’s Note: This is the basic recipe but you can definitely turn up the heat and flair with this. Use a can of tomatoes with diced green chiles (like Rotel) to turn up the heat or try using Pepper Jack cheese. Also, try spreading an 8 ounce block of softened cream cheese on the bottom of the dish first before spreading the bean dip on top. Throw in a small can of diced olives and you have a warm dip that is similar to a 7 layer dip. This dip still tastes great when it has cooled.

Guacamole



I went by my parents and my dad had all of these ingredients from a batch of guacamole. He gave me all his left overs so I made my own! 

  • 2 avocados, peeled & mashed
  • 1 small red onion, finely chopped
  • 1 clove garlic, minced
  • 1 ripe roma tomato, chopped
  • 1 lime, juiced
  • 1-2 T of cilantro
  • 1 Jalapeno, seeded and diced
  • salt and pepper to taste

Mix all ingredients & chill. Serve with chips. Enjoy!!

Easy Mexican Dip



Here is a quick, easy, and tasty dip. This is always a request among my friends. It's VERY good!!! I have to double it sometimes because there is never any left. Enjoy!!


8 oz cream cheese, softened
1 can of black beans, drained and rinsed
1 can of Rotel with lime and cilantro, drained
1 pkg of mexican cheese or cheddar cheese


Spread cream cheese in the bottom of a 13x9 dish. Layer with black beans, Rotel, and cheese. Bake at 325 until cheese is melted (approx 20 mins). Serve with scoops or Frito's.

Grape Salsa



Another good one from Libby! I first had this recipe when I went down to Baton Rouge last summer. I could not stop eating it! It's very different but good. Think mango or pineapple salsa... sweet flavor. The colors are amazing together too!! Great, bright dish for the summer (and it's healthy). Beware, it makes a big batch! Try it over chicken or pork.

1 bunch seedless green grapes, cut into halves (I quartered the big ones)
1 bunch seedless red grapes, cut into halves
1 pint grape tomatoes (i cut these too)
1/2 to 1 purple onion, chopped
1/2 green bell pepper, chopped
1/2 red, yellow or orange bell pepper, chopped (I use 1/2 of all 3)
1 bunch cilantro, stems removed and chopped
3-4 garlic cloves, finely chopped 
1 jalapeno chile, seeded and chopped
Juice of 6 limes (scrape a little pulp in there too)
Olive oil to taste

Combine the grapes, tomatoes, onion, bell peppers, cilantro, garlic and jalapeno chile in a bowl and mix well.  Add the lime juice and olive oil and toss to coat. Let stand at room temperature for 1 hour. Serve as an appetizer with corn chips or as a side salad.

Fruit Dip



This recipe came from my mother in law. It is so good. I could eat it with a spoon! You can serve it with just about any type of fruit. I recently made this for a baby shower I helped throw for my friend Kim. This was our set up.




It was really nice!! The dip taste like pina colada!! Mmmmmmmm mmmmmm it's good!!


1 can of Coco Lopez, shake well
1 8oz cream cheese, softened
1 t vanilla
1 c of powdered sugar


Mix cream cheese and powdered sugar until well blended and creamy. Mix in Coco Lopez a little at a time, blend well after each addition. Add vanilla and mix well. Chill. Serve with assorted fruit.

Buffalo Chicken Dip


Happy Tuesday everyone. I have this dip that will make your rainy day better. My friend, Heidi, made this a few times over the past month. It was a hit every time! So I thought I'd share it with you. It is PERFECT for game day, potluck, or any occasion really. Enjoy!



Preheat oven at 350.

1 roasted  chicken, pulled apart OR 2 cans of chicken, drained
approximately 1/2 bottle of Frank's buffalo sauce
approximately 1/2 bottle of ranch dressing
8 oz of cream cheese, softened
8 oz bag of sharp shredded cheddar cheese

Mix chicken and buffalo sauce. Layer in a glass baking dish. Mix ranch and cream cheese and spread on top of chicken then sprinkle cheese on top.
Bake @ 350 for approximately 30 minutes, until cheese is bubbly. Serve with wheat thins or Ritz crackers.

Warm Jalapeno Dip



My friend and coworker, Darla, brought this dip to book club. I was surprised by the warmth of the dip. I was not disappointed!!! It is almost addicting. I made it for Superbowl and everyone commented on how great it was so try it for yourself. I took it to work the next day and it was gone quick. We didn't heat it up and it was good cold. We mentioned how it would be good over enchiladas. Enjoy!!

2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese
Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chile's and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
Microwave on High until hot, about 3 minutes. Serve with tortilla chips.

Hot Pizza Dip


I made this for my book club on Friday night and it was delicious. It is from allrecipes.com (they have great recipes!!)  It is like.... pizza on a chip!! Literally. I also took some to a birthday party last night and it was a hit... again. So if you like pizza, you will LOVE this. Just try it, I promise it will not disappoint you. This recipe called for onions and bell peppers but I opted for green onion and no bell pepper. So add whatever pizza toppings you like. Also, mix the cream cheese mixture (with dried ingredients) a day or 2 earlier so the spices can set in.

8 oz cream cheese, softened
1/2 t dried oregano
1/2 t dried parsley
1/2 t dried basil
a pinch of Italian seasoning
a dash of garlic powder
1 c shredded mozzarella cheese
1 c shredded Parmesan cheese
1 cup of pizza sauce (I bought the small jar and used the whole thing... It's about 1 1/2 c)
2 oz pepperoni, chopped
2 T black olives, sliced (I used a small can)
1-2 stalks of green onion, chopped

In a small bowl, mix the cream cheese and spices. Spread the mixture in a 9 in dish. Sprinkle 1/2 c of mozzarella and 1/2 c of Parmesan cheese over cream cheese. Spread the pizza sauce over cheese. Add remaining cheese then top with pizza toppings. Cover, microwave for 5 minutes or bake at 350 for 20 minutes. Serve hot with bread sticks or tortilla chips.

Apple Brickle Dip

Hey friends! Here is yet another fantastic recipe that I got from Libby. It is SO GOOD!! I know she likes to make it a lot during the summer. But there isn't a bad time to make it. I've made it for a baby shower, girl gatherings and Christmas parties. When Libby first made this for me, we were in Ruston. We were literally in the kitchen eating it with a spoon!! Just try it... You won't be disappointed. I mean look at the ingredients.... you can't go wrong! Oh and sorry about the picture with the already eaten dip. I tried to get in there to take a picture and it was already going fast!! It was perfect for Christmas party with the green and red apples. Enjoy!


8 oz cream cheese, softened
1 t vanilla
1/2 10 oz pkg almond toffee bits (Heath bar bits)
1/2 c brown sugar
1/4 c sugar
1/4 to 1/2 a small pkg of chocolate chips
Gala and Granny Smith apples


Beat cream cheese, sugar, vanilla. Fold in chips and refrigerate. I make it the night before and add more Heath bits on top right before serving. Slice apples and coat with Fruit Fresh or lime juice.

Cheese Ball


So this one was brought to work by Chad, our tech. We always give him a hard time because he signs up for plates or silverware when we have a pot luck at work. So he told us he would impress us with an appetizer.... and he did! It was great! Everyone really enjoyed it so I made it for a Christmas party I had at my house. There wasn't much left but I brought the rest to work and it was gone by the end of the day. So I don't think you can go wrong here people. It's easy to make and good to eat. I added a ranch packet to my cream cheese just to add a little extra flavor and it was good. Not too big of a difference so if you have one and want to add it go ahead but if not, no worries. It will be just as good! Serve with wheat thins.


8 oz cream cheese, softened
1 ranch packet if you like
8 oz mild shredded cheddar cheese
8 oz sharp shredded cheddar cheese
1 bunch of green onion, chopped
red pepper flakes (be generous)
chopped pecans


Mix cream cheese and ranch; add remaining ingredients and mix well. Place on wax paper and mold into a ball; chill over night. If your having a party (and if you have the time), you can make small individual balls for easy serving. Serve with wheat thins.

Corn Dip


The season has arrived!! Music, parties, food, drinks, and holiday cheer.... Nothing else like it! This is my favorite time of year because it's not only my birthday but also a time for friends and family to come together to celebrate the birth of our Lord. I have a total of 9 Christmas parties this year. Three of these will be hosted at my house. So I have to come up with different foods to have at each so I can blog it for you!! Monday, I had my coworkers over for deer chili and everyone brought a topping, dip, or dessert. It was a great turn out!! My coworker, Brittany, brought corn dip. There are tons of different kinds of corn dip and this one was very good!! I thought it was great the next day too. If you have a corn dip that you like, please post the difference under comments. I would love to hear how others make it! I have more parties coming up so I will have more recipes to share! Merry Christmas!


2 cans of Mexicorn, drained
1 c fat free sour cream
1 c fat free mayo
3 green onions, chopped
2 (4 oz) cans of chopped green chilies
3 spoonfuls of jalapeno peppers (I use the jar of chopped peppers)
1 c shredded cheddar cheese




Mix, chill, and serve with Frito's.

Laura's 7 Layer Dip


I have tried SO many 7 layer dips with all sorts of varieties of ingredients, layers, & spices. Well let me tell you.... this is by far the best one EVER! My sister, Laura, used to make this for everything b/c everyone requested it. I made it for my group of friends a couple years ago and this is still my number 1 requested dip. I have never seen anyone take just one bite of this dip (probably b/c its hard to get to the bottom of the dip... It's a thick 7 layers!) Trust me, take this to a gathering where everyone is watching the game, having girls night, or a BBQ. It has great flavour and feeds A LOT of people!
Layer in this order in a 13x9 inch dish:
2 cans of refried beans
2 pouches of the spicy Wholly Guacamole (boxes usually come with 2)
1 16 oz sour cream, mixed with taco seasoning packet
1 medium to large roma tomato
green onion (I like more green onion but my sister doesn't put a lot so it is to your discretion)
1-2 cans of sliced black olives (same as green onion... your discretion)
1 bag of shredded cheddar cheese (or mexican cheese)

Chill and serve with scoops. Enjoy!

Fiesta Jalapeno Dip

Ok y'all... this dip is AWAYS a hit! I received this on a recipe chain a while back and I've made it ever since. It is delicious and super easy to make!! I am a huge appetizer person. I can live off of chips and dip. There's something about that slaty craving I get. My friend Heidi makes this dip too and the bowl is usually scraped clean! I have found that jalapenos make this dip spicier than green chilis. I like spice though!

1 pkg of cream cheese, softened
1 pkg ranch seasoning (can use fiesta ranch for a zing)
1 can of black beans, rinsed and drained
1 can of corn, drained
1 small can of jalapeno peppers or green chilis

Mix cream cheese and ranch packet. Add remaining ingredients and mix well. Chill and serve with fritos.
